summertime meatloaf

"One of my favorite summertime dishes is meatloaf made with garden fresh tomatoes. I never seem to make it exactly the same way twice, but it seems to always taste fabulous! I like to serve it with fresh sweet corn from one of our fields. The dish was almost as awesome as the double rainbow that appeared over the farm recently!" - Anne Burkholder, cattle farmer and author of the blog, Feedyard Foodie. Along with her husband and three daughters, Anne lives on a Nebraska farm and was the recipient of the Beef Checkoff's Advocate of the Year in 2017.

balsamic steak pasta

"Like all moms, I wear a lot of hats: mama, ranch employee, ranch wife, chief car-packer, distributor of snacks, protector of the iTunes, head chef…and the list goes on. I’m proud of what we do on our New Mexico ranch, and feel so fortunate that we will be able to raise our boys on the ranch in one of the richest traditions of our country.  Most of the food in this country is raised by families just like ours, and this community is the best I’ve ever known.  One of my favorite recipes to make all year is this Balsamic Steak Pasta." - Cassidy Johnston, rancher and author of the blog Cow Country. Cassidy lives with her husband and two sons on a cattle ranch in southeastern New Mexico.

beef enchilada soup

"Some days you just need a bit of comfort food.  Something warm, filling and delicious! That is my definition of 'comfort food!'  Add in 'easy' and 'quick-to-make' and we have a winner! Today is one of those days – a comfort food kind of day.  It is drizzly and cold in Kansas and a crockpot full of Beef Enchilada Soup from my homemade recipe sounds perfect. And even better...it smells amazing when you come back into the house from being outside!  So go dig out your crockpot and get it ready for a big pot of deliciousness today!" - Debbie Lyons-Blythe, rancher and author of the blog Kids, Cows and Grass. Debbie lives on a ranch in central Kansas with her husband and five kids.

tasty roast beef

"As part of my ranch wife duties, I feed the crews of folks who come help us when the work load is too much for my husband and I to handle on our own. Whatever I choose to serve has to be insanely flavorful and easy-to-eat on the fly. Trust me, this Roast Beef recipe does not disappoint. In fact, this recipe has earned a place in my top five favorite beef recipes – and has left several speechless with its ridiculous tastiness." - Terryn Drieling, rancher and author of the blog, Faith Family and Beef. Terryn lives in Nebraska with her husband and three kids and is the recipient of the Beef Checkoff's Advocate of the Year in 2018.

farm-ous lasagna

"Whenever we work cattle, have a crew out to help or need to work together on a project, I know that I can never go wrong with the cheesy, meaty greatness that is my 'Farm-ous Lasagna.'  Each person on our crew plays an integral part in the success of the farm. And the only thing that determines their extent of involvement is the willingness to work hard, the flexibility to adapt to unexpected events and the passion to see something through to the end.  And this 'Farm-ous Lasagna' is just reward for a hard day’s work!" - Val Wagner, rancher and author of the blog, Wag'n Tales. Val lives on a farm in North Dakota with her husband and four sons.
